I may be mistaken, but I believe North Dakota's Greg Johnson was also a
three-time finalist.  Can anyone confirm or deny?
 
As for Runners-up excelling, Johnson would be one.  He was the runner-up to
Kariya in 1993--Johnson's senior year--and is now a solid player with the
Red Wings.
 
As for Minnesota-Duluth going '3-for-3' in the Hobey with three finalists
and three winners (Kurvers, Watson, and Marinucci): UMD has actually had
six finalists....Norm Maciver, Derek Plante, and Brett Hull--all in the
NHL--all were finalists as well.
