Rule 4-2-c: "If the opposing team scores a goal while a team is
short-handed by one or more minor or bench minor penalties, the
short-handed team shall be permitted to replace immediately on the ice
the first player whose minor or bench minor penalty caused the team to
be short-handed."
 
Since this player was V1, he would come out of the box, and 1:00 would
remain on V2's penalty.

No, because it would not change the fact that V1 was the first player
whose penalty caused his team to be short-handed.
