Another option to consider is the format of last weekend's College Hockey
Showcase.  Alaska-Fairbanks and Alaska-Anchorage could invite two other
teams and have a non-elimination tournament.  Since UAF and UAA will play
each other at another point in the season, the "Showcase" format would be
perfect.
